Today I have decided to publish the oldest post in the draft folder: one of my banana bread recipes. It has started as a fat free recipe to which I had decided to add some healthy fats in the shape of walnuts. I used to make this bread with apple sauce, but one time I didn’t have any in the house so I tried rose hip marmalade. The kids liked it so much better that way! Most of the time I add some dried cranberries as well, but I seem to be the only one who likes it better that way. Next time I’ll try adding some ground flax as well.

 

Banana Bread – fat free

3 large very ripe bananas (enough to mash 1 cup)

1 cup whole wheat flour + 1/2 cup all purpose flour

1/3 cup brown sugar 

2 egg whites

1/2 cup rose-hips marmalade (or plum butter or apple sauce*)

1 tsp baking soda

1 tsp salt

1 tsp rum extract (optional)

1/2 – 1 cup walnuts (optional)

1/2 cup craisins (optional)

*if using unsweetened apple sauce, use 1/2 cup brown sugar instead of 1/3 

With a mixer, beat the mashed bananas with the sugar. Add the eggs, rum and marmalade and beat again. In another bowl, mix the dry ingredients. Add this to the banana mixture and stir with a spoon until the dry stuff is all moistened. Add walnuts** and craisins. (Not too much stirring!)

**Omit walnuts for fat-free banana bread

Pour batter into a 9×9 inches baking dish sprayed with a little Pam.

Bake in a preheated oven at 325 for about 55 minutes.
