Having breakfast for dinner June 10, 2008

I know stratas are usually a breakfast or brunch type of food, but we prefer to stick with a light bowl of cereal with milk in the morning, so I have made this for dinner. I have made this dish once before using asparagus tips instead of the zucchini (you can really use any veggies you like) and Worcestershire sauce instead of the dry mustard (didn’t have any dry mustard in the house at the time), but we had some problems with the baking time because my husband forgot the plastic cover on the dish when he popped it in the oven. By the time he realized it, he had to take the whole thing out and cool it , so he could peel the melting top off the handles of the glass dish. So, we really didn’t know how long we should bake it after this.

This time everything went off without a glitch and the strata was so delicious everyone had at least two servings. 🙂

 

Vegetable egg strata

9 slices of day-old bread

2 cans mushrooms

One medium size zucchini cut into small slices

1 cup of frozen peas

One large red pepper cut in pieces

4 egg

6 egg whites

2 cups milk

1 small onion chopped

Dijon mustard (2-3 Tbsp)

3/4 tsp dry mustard

Salt (about 1/2 tsp)

Pepper (1 tsp)

Shredded cheese (I didn’t have any in the house so I broke up about 100gr of slices)

 

Cut slices of bread in 1” cubes. Spray a 9×13 in baking dish with oil and layer bread on the bottom. Layer whatever veggies you’re using on top and cover in cheese. In a large bowl beat the eggs and mix with the onions & milk, about 2-3 Tbls of mustard and 3/4 tsp dry mustard, salt & pepper. Pour over everything and press gently down on the mixture. Sprinkle with more cheese (I shredded some extra for the top), cover and refrigerate at least 6 hours. (overnight is good)

Uncover and bake in preheated 350 F oven for about 45-50 minutes. Let sit 10 mins before cutting and serving.
